Toronto's Supernova Ballroom cocktail bar just opened and it's serving up some incredible, sustainable beverages. Supernova Ballroom is the newest undertaking from Trash Tikki, an international pop-up bar which seeks to lessen the environmental impact of bars and their beverages. The Supernova Ballroom is located downtown Toronto, and showcases some revolutionary anti-waste drinks in a fun, bright setting. Since these cocktails are environmentally friendly, there's no shame in ordering a few. The space is designed with early-era disco in mind. Bright pops of colour and curving shapes give the room a funky, cheerful vibe. In 2018, Dandelyan in London was named the “World’s Best Bar” but soon closed its doors for good before I could visit. I was surprised to see that one of the partners and the head bartender will now introduce their own new bar, right here in Toronto! All drinks are made with local, Ontario ingredients that are in season and shelf-stable. Everything that goes into the cocktails is used three to four times before being thrown away. For example, a lemon might have its juice, pulp, and rind used in different things so that nothing goes to waste. All oleos and syrups are made by Supernova Ballroom, and even rinds and husks leftover from a local juicery are reincorporated into cocktails to increase sustainability. Their signature drink, Le Classique, is mixed with cognac, lemon oleo, lemon juice & Mumm. The venue also serves small plates of local food to nibble on while you enjoy your drink, such as the bright pink beet juice eggs.
