Ceviche is the kind of meal you can't find just anywhere, but when you do, it's definitely worth taking note of. Rosarito, a popular Austin food truck, just opened a ceviche food truck in Austin that'll satisfy all of your fresh seafood cravings. Cevicheria opened earlier this month in East Austin thanks to Rosarito, a Baja Californian food truck that specializes in ceviche, tacos, burritos, and more. Whether you're in the East Austin area or not, you absolutely need to stop by! Rosarito has been praised for quite some time on their ceviche and finally, there's a truck dedicated to the dish entirely. Cevicheria is open 11 a.m. to 5 p.m. Wednesday through Sunday, giving customers plenty of time to stop by and grab a meal. Their new menu is already quite extensive and includes ceviche in a cup options, specials such as shrimp cocktail and tuna or salmon bowls, greens, tostadas, and sweets. We don't know about you, but our mouths are already watering. SXSW's cancellation is certainly throwing the new food truck a curveball, but, we're sure they'll still manage to get plenty of business their way.
