The sweet bun, called the Persian, has become somewhat of a legendary treat in the city. It consists of a cinnamon bun topped with a secret pink icing. According to a TVO article, the Thunder Bay Persian was invented by a man named Art Bennett, who founded Bennett's Bakery which still sells the desserts to this day. Legend has it that Bennett created the Persian during the 1940's when he was visited by army commander General ‘Black Jack’ Pershing.
The current owners of the bakery still have the secret recipe locked away in an underground safe, making it the ultimate secret food of Ontario.
