Toronto will be getting its first taste of authentic Mexican cuisine with a Toronto vegan taco twist this summer! Chef Ivan Castro, a Mexico City native, takes on the culinary traditions passed down to him from his mother and grandmother. Luckily for us, he is now introducing it into the Toronto food scene with his new culinary venture.
La Bartola Taco Shop will be participating in a couple of food festivals this summer, including the Vegandale Food And Drink Festival at Fort York National Historic Site on Aug. 10, 2019 and the Veg Food Fest at the Harbourfront Centre from Sept. 6 to Sept. 8, 2019.

La Bartola Taco Shop tells Narcity that it will be previewing what it has to offer before officially opening at an undisclosed location in 2020. La Bartola is still scouting areas for their permanent location next year.
So don't waste the opportunity to try out some authentic Mexican exclusively plant-based cuisine. You will be able to sample tacos as well as Mexican street corn at the festivals.
Although many taco spots do offer a veggie option or two, La Bartola Taco Shop will be the first fully plant-based taco restaurant in Toronto. Exciting news! Especially when the chef is using real ingredients, flavours and influence from his own upbringing. “I was missing the amazing tacos from Mexico City andthe delicious food from Oaxaca and wanted to give Torontonians the opportunity to try themwithout having to travel south," says Chef Castro in a press release.It looks like the ingredients are just as innovative as the concept. Braised hibiscus flowers, smoked banana blossoms, and jackfruit will be some of what we can look forward to from Chef Castro. A refreshing change from the usual tofu option. Chef Casto moved to Toronto in 2016 with his husband and their family of four dogs to start a new chapter in their lives. We are glad that they are bringing a taste of home with them, because Toronto loves its tacos.
