This will pull up a calendar of dates with prices. Pick the cheapest ones and you're on your way to the land of pasta for cheap. 

We found roundtrip flights for less than $500 from Vancouver to Milan next April when we used this method. There were also flights available to Rome for $525 and Venice for $539.

They say nothing in life is free, and even fewer things in life are cheap. For this flight deal, there's a huge trade-off with two stops each way.
