The drama — which is based on a book of the same name, released in 2018 by Canadian author Miriam Toews — follows the women of an isolated religious community who "grapple with reconciling a brutal reality with their faith."
The film won Polley the Oscar for Best Adapted Screenplay, with many fellow Canadians celebrating the win.
"I want to thank the Academy for not being mortally offended by the words 'women' and 'talking' put so close together like that," Polley herself said in her acceptance speech.
The film also received a nomination for best picture, but ultimately lost to the A24 drama Everything Everywhere All at Once.
Polley was not the only Toronto filmmaker to take home an award on Sunday, documentary director Daniel Roher was recognized with the Best Documentary award for his film Navalny.
The documentary follows Russian opposition leader Alexei Navalny, who was poisoned with a lethal nerve agent in August 2020.
In his acceptance speech, Roher dedicated his win to Navalny and "to all political prisoners around the world."
"Alexei, the world has not forgotten your vital message to us all: we cannot, we must not be afraid to oppose dictators and authoritarianism wherever it rears its head," he said.
Other noteworthy Canadian nominees included Turning Red, which was nominated for Best Animated Feature, but ultimately lost to Guillermo del Toro’s Pinocchio, and Canadian-U.S. documentary film Fire of Love, which was nominated for Best Documentary.
Who won 'Best Actor' at the 2023 Oscars?
One of the biggest wins of the night went to Brendan Fraser, who took home the award for Best Actor for his role in Darren Aronofsky's drama The Whale.
The film follows Fraser's character, a "reclusive, morbidly obese English teacher" who attempts to reconnect with his estranged daughter.
Fraser beat fellow Best Actor nominees Austin Butler (Elvis), Colin Farrell (The Banshees of Inisherin), Paul Mescal (Aftersun), and Bill Nighy (Living), but shouted out the actors in his acceptance speech.
"Gentlemen, you laid your whale-sized hearts to bare so we could see into your souls like no one else could do," he said. "It is my honor to be named alongside you in this category."
According to CTV, Montreal-born makeup artist Adrien Morot was part of the team recognized at the Oscars for helping to transform Fraser into his 600+-pound character for the film.
Morot won for Best Makeup and Hairstyling, alongside makeup artist Judy Chin and hairstylist Annemarie Bradley.

Well, the biggest night in showbiz has come and gone. After months of campaigning, genre-bending sci-fi kung-fu family drama Everything Everywhere All at Once pretty much swept the evening, taking home seven of its 11 nominations for Best Picture, Best Director, Best Actress, Best Supporting Actor, Best Supporting Actress, Best Original Screenplay and Best Editing. Oscar watchers had plenty of questions about one woman in the crowd at the 95th Academy Awards on Sunday, after she showed up in an enormous white dress with a veil that dominated her section of the audience.
Who is that woman? Who does that woman think she is? And WTF is she doing with a giant outfit in a theatre?*
The woman's name is Tems, and the 27-year-old was nominated along with Rihanna for Best Original Song for "Lift Me Up" from Black Panther: Wakanda Forever.
Tems and her giant dress showed up throughout the broadcast, but she really had her moment when host Jimmy Kimmel went into the crowd to talk to Colin Farrell and Malala Yousafzai.

Why was Tems at the Oscars?
Tems was nominated for Best Original Song at the 2023 Oscars for her work on Lift Me Up, the song performed by Rihanna from the Black Panther: Wakanda Forever soundtrack.
The movie's director, Ryan Coogler, and composer Ludwig Goransson were also nominated for the song.
Tems and Coogler collaborated to write the lyrics.
They ultimately missed out on the trophy, which went to the song "Naatu Naatu" from RRR.
Although the dress clearly caused a stir in the audience at the Oscars, it does look like the sort of thing that someone would wear onto the red carpet.

The Oscar red carpet festivities are all about awkward interviews, stunning outfits, shouting reporters and voguing actors — unless you're Hugh Grant, who clearly just wanted to get to his seat.
The star of the upcoming Dungeons & Dragons: Honor Among Thieves movie got super crusty during a red carpet interview with ABC's Ashley Graham on Sunday, throwing out a few digs at the whole movie business and then refusing to play along with her questions.
The awkward interaction has since blown up on social media, where some are applauding Grant for his honestly while others are dismissing him as a total d*ck.
“Hugh Grant! You are a veteran of the Oscars and you’ve been here a few times. What’s your favourite thing about coming to the Oscars?” Graham says at the beginning of the interview.
It's a fairly standard red carpet question but Grant was having none of it. The Brit struggled to find an answer before finally saying: "Uh, well, it's fascinating. The whole of humanity is here. It's vanity fair."

We're guessing that Grant was referring to the social satire titled Vanity Fair and not to the Vanity Fair afterparty, but Graham seemed to miss that.
"That's where we let loose and have a little bit of fun!" she said.
Graham then asked what he's most excited to see at the show.
"To see?" Grant asked, without expanding on the question. "No one in particular."
A flustered Graham then tried to get him to talk about his outfit.
"OK well, what are you wearing tonight then?" she asked.
"Just my suit," said Grant.
"Your suit! Who made your suit? You didn't make it!" said Graham.
"I can't remember my tailor," Grant said.
But Graham refused to give up. Instead she took one final stab at getting a comment out of the salty actor, asking him what it was like to be in Glass Onion: A Knives Out Mystery.
"Well I'm barely in it," Grant said. "I'm in it for about three seconds."
"Yeah, but still you showed up and you had fun, right?" Graham asked.
"Almost," said Grant. Graham then said goodbye and Grant simply said "yeah" as he walked away.
Grant's lack of f*cks definitely triggered some responses on Twitter.
"Hugh Grant just gave the most dismissive interview I’ve ever seen, it was amazing," said one user.

Harrison Ford announced the Best Picture winner to cap the night, and his former Indiana Jones And The Temple Of Doom co-star Ke Huy Quan basically rushed up and gave him a big hug and a kiss.
It was a huge moment for Quan, who won Best Supporting Actor earlier in the night after taking a decades-long break from making movies.
