Canada's best new restaurants for 2024 have been revealed, and the list goes way beyond Montreal, Toronto and Vancouver.

Air Canada's Best New Restaurants ranking celebrates standout dining experiences from seven different cities across four provinces this year, so no matter where you are in the country, there could be an amazing new spot near you.

Taking the crown this year is Montreal's Sabayon, a cozy 14-seat restaurant led by pastry chef Patrice Demers and sommelier Marie-Josée Beaudoin, known for its refined afternoon teas and innovative dinners, according to Air Canada.

Toronto's Mhel, which blends Korean and Japanese flavours under the direction of co-owners Seung-min Yi and Young Hoon Ji, took second place. Meanwhile, Mont-Tremblant's Maison de Soma, which Air Canada says is "[redefining] farm-to-table dining from a 600-acre property in the Laurentian Mountains," earned third.

Air Canada's annual Best New Restaurants ranking, now in its 23rd year, is a well-regarded showcase of Canada's dynamic food scene. The 2024 list was chosen by Tara O'Brady — a culinary journalist, award-winning cookbook author and Wall of Bakers judge — who visited all 30 restaurants across 16 cities from the longlist released in September, assessing them on culinary vision, ingredient quality and overall experience.
